The Art of Coffee, the Essence of Life

Our Roots: From Café Massimo to Seven Hills

The journey of Seven Hills began in 1997 under the name Café Massimo.

Founded with a passion for exceptional coffee and heartfelt hospitality, Café Massimo quickly became a beloved spot for locals.

Over the years, our focus on quality and connection evolved into a deeper mission—to create coffee that reflects not only flavor but also meaning.

Reimagined as Seven Hills, our brand carries forward the legacy of Café Massimo while embracing a broader vision.

The number seven, central to our identity, symbolizes completeness, transformation, and harmony. It reflects the seven stages of coffee beans — from their natural state to the perfect roast — and connects to Auckland’s seven volcanic hills, a tribute to New Zealand’s vibrant landscape and spirit.

Seven Hills

A Journey of Coffee and Life

Honoring New Zealand’s Coffee Culture

Our philosophy is deeply influenced by New Zealand’s coffee culture, which blends quality, innovation, and community. Known as the birthplace of the Flat White, New Zealand has elevated coffee into an art form.

Here, cafés are more than places to grab a drink—they’re spaces for connection, storytelling, and relaxation.

Located in Takapuna, our first café reflects this harmony. Overlooking the beach and facing the dormant volcano Rangitoto, it’s a place where city life meets the tranquility of nature.

Here, we welcome not just people but their pets too, creating a space where all can feel at home.

Crafting exceptional coffee, celebrating every stage with care and harmony.

Artful Roasting

Elevating coffee through skillful roasting, unlocking rich flavors and unique aromas in every bean.

The Seven Stages of Life and Coffee

The number seven holds a special place in our philosophy, reflecting both the stages of coffee and the cycles of life:

  1. Green Beans: The raw potential, unprocessed and full of promise.
  2. Yellowing: The first signs of transformation, as the beans begin to dry.
  3. Browning: The emergence of flavor, marking the start of caramelization.
  4. Light Roast: Bright and delicate, highlighting the bean’s natural essence.
  5. Medium Roast: A balanced profile, where sweetness and complexity shine.
  6. Medium-Dark Roast: Deep, rich tones, with bold flavors emerging.
  7. Dark Roast: The pinnacle of the journey, robust and full-bodied.

Just as every stage of coffee contributes to its final taste, every stage of life adds to its richness. At Seven Hills, we honor this connection by crafting coffee that celebrates life’s transformations, one cup at a time.
